if you have set up FTP access while in developer mode then you can just browse to the flags folder and delete the developer file. If you don't and only have shell access then do rm /flags/developer which will remove the flag.
The best way to backup your data is to setup FTP access while in developer mode which you can read about here http://spiffyhacks.com/thread-215.html and then copy the data off. I don't remember where this data is stored... somewhere in the /LF folder I believe.
